To make the emojji cheesecake you will need
(Makes 8 cheesecakes, tin size is 3/4 cup
200g plain sweet biscuits
4 Tbsp. butter
2 3/4 cup plus 1 Tbsp. cream cheese
2/3 cup plus 2 tsp. sugar
5 tsp. all purpose flour
2 eggs plus 1 egg yolk
1 tsp. vanilla
5 tsp. cream
Yellow food coloring
Nonstick baking paper
Compound milk or dark chocolate
Compound white chocolate with blue and red oil-based food coloring
Preheat oven to 320°F
Put the biscuits and base into a bag and crush them with a rolling pin
Pour that into the melted butter and mix well
If you're using a loose-based tin put a piece of foil over the top and make sure it is up to the top on all sides. Then add the base back into the tin.
Place a scoop of crumbs into each tin and you something to push the crumbs flat down on the base.
Mix the cheesecake filling into able with the mixer and mix until it is smooth.
Whisk in with a whisker the eggs, cream, flour and vanilla. Whisk it on high till it is fluffy.
Adding the yellow food coloring.
Pipe the mixture into the baking tens. Tap each one to smooth out the tops.
Place them all into a large baking dish and carefully pour in some boiling water to halfway up the side.
Bake for 15 minutes and keep an eye so they do not allow them to get too brown on top.
Once they are cooked cool and remove them from the tens. You may need to place them in the freezer for a couple of hours.
To make the decorations print out an emoji in the size of your desserts. Place a sheet of nonstick baking paper over the top. Pipe in the declarations. You can also serve the cheesecakes and let your friends make their own emoji's.
